Dearly Beloveds, we’re gathered here today to celebrate a food that holds a special place in our family’s hearts, (and on the dessert table, amongst the spread of colorful homemade sweets for every quinceañera, anniversary, & special occasion): the Mexican wedding cookie! We have many memories of cooking hundreds—hundreds!—of these in the kitchen with our Grandma Campos before each of our siblings’ weddings. Later, after embarking on our journey to health, these were one of the first sweets we recreated in a grain free and dairy free version, so we could continue to make—and bake—the beautiful memories that accompany these delicious cookies. Our Abuela Approved Grain Free Mexican Wedding Cookies are made from a blend of almond flour, pecans, powdered sugar, and cinnamon for all to enjoy. Sounds pretty dreamy, right? (OOP!
